The search for the perfect rum is like the search for the perfect tattoo: it’s about character, depth, and the artist’s signature. While mass-produced goods on supermarket shelves often serve a uniform taste, the world of high-quality spirits offers a universe in which every drop is different. But how do you actually recognize what makes a glass of rum an experience? In this guide, we will lead you through the jungle of profiles and show you what to look for.

1. The Anatomy of a Rum: Molasses vs. Sugarcane Juice
The foundation of every rum is the raw material. This is where the wheat is separated from the chaff.
- Molasses Rum: The classic. A byproduct of sugar production. Molasses provides those deep, heavy, spicy aromas. It is the foundation upon which we build at Old Dragon. We love the body that molasses gives the distillate.
- Rhum Agricole: Extracted from fresh sugarcane juice. It is usually more vegetal, ‘greener,’ and possesses a unique, grassy freshness.
Deciding on one path or the other is not a question of ‘better,’ but of style. If you are looking for the dark, complex soul that makes a spiced rum so exciting, molasses is often the more reliable partner.
2. The “Funk”: Why some rums taste “different”
You have surely heard of rums that taste like rotten fruit, nail polish remover, or extremely ripe pineapple. This is the legendary Jamaican “funk” or “hogo.” Esters are responsible for this. They are created during a very long fermentation. While modern facilities often try to eliminate these substances during distillation, at Old Dragon, we deliberately allow these aromatic treasures to flow into our blend. That is the reason why our rum unfolds a complexity when smelled that one looks for in vain in other “smoothed-out” products.
3. The myth of the dark color
A common misunderstanding: “The darker the rum, the older and better it is.” Unfortunately, this is a myth fueled by the massive use of caramel color (E150a).
- The truth: A rum can still have a rather light color after 10 years in the barrel if the barrel was “exhausted.”
- Our transparency: At Old Dragon, we rely on honesty. We do not focus on color as a selling point, but rather on the aromatic profile created by our selection of distillates from Jamaica and Venezuela and the fine refinement with natural spices. Quality is what you taste – not what the coloring tricks you into believing.
4. Maturation: Why time alone is not a quality indicator
In the rum world, there is the factor of the Angel’s Share – the portion of alcohol that evaporates through the barrel in a tropical climate. In the Caribbean, this portion is massively higher than in Europe. This leads to extremely rapid maturation. A 5-year-old rum from the Caribbean often has a level of maturity that a whisky in Scotland would need 15 years to achieve. So, do not be blinded by high age statements. A perfectly blended, young to medium-aged rum can offer a significantly more balanced experience than an “over-matured” rum that tastes only of dry wood due to all the tannins.
5. Old Dragon Rum: When art meets craftsmanship
We have often been asked: “Why create your own rum when there are so many already?” The answer is simple: Because we wanted to translate the craftsmanship we have refined as tattoo artists for over 17 years into rum.
The Old Dragon promise:
- No artificial flavors: We consciously avoid the “chemical club.” What you taste in Old Dragon comes from the quality of the distillates and the precision of the refinement.
- The blend makes the difference: We have combined the intensity of Jamaican rums with the elegance of Venezuelan distillates. This balanced profile makes Old Dragon interesting for both the purist connoisseur and the sophisticated mixologist.
- Making it accessible: We consciously decided against exclusive sets that make getting started expensive. With the Old Dragon Junior (10cl), we offer everyone the opportunity to discover the signature of our blend without having to invest a fortune.
Conclusion: Trust your palate
At the end of the day, there is only one law in the world of spirits: What tastes good to you is right. Don’t be intimidated by complex databases or “expert rankings.” But: Stay critical. Pay attention to the origin, question the transparency, and try things out.
The next time you hold a bottle of Old Dragon in your hand, you now know that it contains not just alcohol, but a conscious decision for character, depth, and genuine craftsmanship.
