Have you ever wondered why some rums taste extremely powerful, spicy, and almost ‘dirty’ (in the most positive sense), while others seem incredibly light, smooth, and almost elegant? The secret lies not only in the molasses or the aging – it lies in the method of distillation.

In the world of rum, there are two main players: the Pot Still method and the Column Still method. At Old Dragon, we rely on understanding both worlds to create the perfect blend.
1. The traditional method: Pot Still
The Pot Still method is the oldest distillation technique. Imagine a large copper pot filled with fermented molasses mash and heated directly.
- The process: It is a discontinuous process (batch process). After each run, the equipment must be cleaned and refilled.
- The result: Since there is less reflux in this process, many heavy components, oils, and complex aromas end up in the distillate. After distillation, the rum is still ‘rough’ and very aromatic.
- The character: Rums from pot stills are the heart of ‘funk’. They bring the powerful, fruity, and spicy notes that we appreciate so much in Jamaican distillates.
2. Modern precision: Column Still
The Column Still method emerged in the 19th century and revolutionized the spirits world. It is a continuous process in which the mash is permanently pumped through tall columns.
- The process: The mash runs through several levels, through which the alcohol is repeatedly purified and concentrated.
- The result: The rum is distilled here to be extremely pure and very high in alcohol. Almost all “heavy” impurities are filtered out during this process.
- The character: You get a very clean, neutral, and smoother rum. It is the perfect foundation for many blends because it does not overpower the more delicate notes.
Why the combination is the key: The Old Dragon principle
The question is not whether Pot Still or Column Still is better. The question is how you use them. A pure Pot Still rum can be too intense for some palates; a pure Column Still rum can sometimes feel a bit “flat.”
At Old Dragon Rum, we use the art of blending to combine the best of both worlds:
- The backbone: We use Column Still distillates to create a clean, elegant base that makes the rum smooth and accessible.
- The soul: We add carefully selected Pot Still distillates to give the blend structure, spice, and a complex aromatic profile.
It is this interplay that creates the depth you have in your glass. We want the rum to be smooth and inviting with the first sip, but unfold its full aromatic complexity with the second.
Understanding distillation means enhancing enjoyment
The next time you drink an Old Dragon, try to look for these two worlds in your glass: Can you feel the smoothness (a sign of an excellent base distillation) and at the same time the spicy, almost “dark” spice notes (the legacy of traditional pot stills)?
Knowing about these processes makes you not only an informed connoisseur but also lets you view Old Dragon with completely different eyes (and senses!). You are no longer just drinking a product, but the deliberate choice of a master blender.
Which type are you? Do you prefer the ‘wild, funky’ rums from the pot still, or do you favor the ‘gentle, elegant’ distillates from the column still? Write to us – we are curious to see how our community feels!
