Fire & Flame: Flambéed Bananas with Old Dragon Rum & Walnut Crunch (Recipe)

After a good BBQ or a long day, there is only one crowning finale: something sweet with character. Forget boring fruit salad. We are waking the dragon and playing with fire.

Flambéed bananas are a classic, but with Old Dragon Premium Spiced Rum, we take dessert to a new level. Why? Because the natural banana notes of our rum intensify the fruit’s flavor, while the alcohol burns away in a spectacular flame, leaving only the pure aroma of caramel and vanilla.

Ingredients (for 4 people)

  • 4 ripe bananas (not mushy, but yellow!)
  • 50g butter
  • 4 tbsp brown cane sugar (Important for the crunch and caramelization)
  • 6-8cl Old Dragon Premium Spiced Rum (For deglazing and flambéing)
  • A handful of walnuts, coarsely chopped
  • Optional: 1 pinch of cinnamon
  • Goes well with: A scoop of high-quality vanilla ice cream

Preparation: How to flambé safely

  1. Preparation: Peel the bananas and cut them in half lengthwise. Chop the walnuts.
  2. Caramelizing: Heat the butter in a large pan (or a cast-iron skillet on the grill). Add the sugar and let it melt slightly until it starts bubbling.
  3. Frying the bananas: Place the bananas with the cut side down into the hot caramel. Fry them for approx. 2-3 minutes until golden brown. Turn them carefully. Now add the walnuts so they toast slightly.
  4. The Dragon Moment (Flambéing):
    • Take the pan off the heat source briefly (important with gas stoves!).
    • Pour the Old Dragon Rum over the bananas.
    • Put the pan back on the heat. If you are using a gas stove/grill, tilt the pan carefully until the flame ignites the alcohol vapors. For ceramic stovetops: carefully ignite the vapors using a long utility lighter.
    • Caution: Keep your distance! A burst of flame will occur.
  5. Serving: As soon as the flame has extinguished, the alcohol has evaporated and the flavor has perfectly infused. Serve the hot bananas immediately with a scoop of vanilla ice cream. The combination of hot (banana), cold (ice cream), and the spiced rum sauce is unbeatable.

Pro tip for grill masters

This dish is the perfect conclusion to a barbecue evening. Use a cast-iron skillet directly on the grate or the side burner (Sizzle Zone). Your guests will be amazed when flames flare up once more for dessert.
