We have already unleashed the dragon – in the cocktail shaker, on the grill, and even in the flambé pan. But sometimes, true enjoyment lies in tranquility. When the evening winds down, you’re sitting in your armchair, and you treat yourself to a good sip, only a small detail is often missing for perfection.
Forget chips or pretzel sticks. When you have a premium rum like Old Dragon in your glass, you need a partner of equal standing. It is time to talk about chocolate.
Why rum and chocolate are a “match made in heaven”
Just like with wine and cheese, there are combinations with spirits that are greater than the sum of their parts. The secret lies in the balance of similarities and contrasts.
A good, cask-aged rum naturally brings notes that we also love in the dessert world: vanilla, wood, dried fruits, and caramel. Cocoa is the natural ally of these flavors. When they meet in the mouth, a depth of flavor is created that neither ingredient could achieve on its own.

The “Old Dragon Effect”: Banana meets cocoa
Every rum is different. That is why not every chocolate works with every bottle. Old Dragon is special. Due to its base of aged rum from Venezuela and Jamaica and its refinement, it has a distinct, natural banana and caramel note, supported by a pleasant sweetness and 40% strength.
When these notes meet the tart bitterness of a good chocolate, magic happens in the mouth. It is reminiscent of an extremely high-quality, adult version of a chocolate-banana dessert – only liquid, warming, and complex.
The perfect choice: Go to the dark side
So, which chocolate is the best fit?
- Milk chocolate? Probably not. It is usually too sweet and lacks cocoa character. It would simply be overwhelmed by the bold Old Dragon.
- The favorite: Dark chocolate (bittersweet) with 60% to 75% cocoa content. That is the “sweet spot.” It has enough tartness and bitterness to hold its own against the sweetness of the rum, but enough creaminess to blend the flavors. Look for good quality – the fewer ingredients on the package, the better.
The guide to enjoyment (The ritual)
Food pairing is not a competitive eating contest. Take your time.
- The preparation: Pour yourself a glass of Old Dragon (neat at room temperature is best here to taste all the flavors). Break off a piece of the dark chocolate.
- The melt: Put the piece of chocolate in your mouth. Do not chew it down immediately! Let it melt slowly on your tongue until the cocoa flavors spread through your mouth.
- The sip: Now take a small sip of Old Dragon. Let the rum roll over the melted chocolate on your tongue.
- The experience: After swallowing, exhale through your nose. Do you feel how the tartness of the cocoa tames the sweetness of the rum and suddenly the banana and vanilla notes explode? That is the dragon in a chocolate coat.
The next time you have guests or want to treat yourself to something nice: skip the dessert. Just put the bottle of Old Dragon and a bar of your best dark chocolate on the table.
